Ingredients

Bowl:

1/2 cup uncooked rice of choice

.5 lb sushi grade tuna* cubed

1 avocado sliced

1 cucumber halved and sliced

1 cup shelled edemame

Sesame seeds for garnish


Marinade:

1/2 cup scallions sliced (set aside some for garnish)

1 tbsp fresh ginger grated

1/4 cup tamari

1 1/2 tbsp aji -mirin

2 tbsp sesame oil

1 tbsp sesame seeds

Crushed red pepper to taste, if you want to add heat

Preparation

  1. Rinse and cook rice according to packaging. Set to the side once cooked

  2. Cook edemame according to packaging (I used a frozen bag)

  3. Prepare marinade - add scallion, ginger, tamari, aji-mirin, sesame oil, sesame seeds and crushed red pepper to a bowl. Whisk until all ingredient are mixed well. Let it sit for about 10 minutes

  4. Add tuna to a cutting board and cube evenly. Add cubed tuna to the marinade. Using a spoon, incorporate maridnade well with tuna

  5. Prepare bowl - add rice, marinated tuna, sliced cucumber, cooked edemame, sliced avocado, scallion and sesame seeds


*NOTE: MUST BE SUSHI GRADE !!!!!
