Ingredients
Spicy Mayo:
1/3 cup olive oil based mayo
Sriracha to liking
1 tbsp tamari
1/2 tsp sesame oil
The Rest:
1 lb rinsed, peeled and reveined shrimp
1 cup uncooked rice of choice
2 cucumbers diced
1 carrot julienne cut
1 avocado diced
1/2 knob of ginger sliced
1/2 cup edamame shelled
1/4 red onion sliced
2 tbsp olive oil
Salt to taste
Black pepper to taste
Red pepper flakes to taste
Sesame seeds for garnish
Preparation
Prepare spicy mayo - add mayo, sriracha, tamari and sesame oil to a bowl and mix well. Set to the side
Rinse and cook rice according to package. Set to the side
Rinse and cut vegetables accordingly. Set to the side. Cook edamame according to package. Set to the side.
Rinse and pat dry shrimp. Set to the side. Heat olive oil, salt, black pepper and red pepper flakes in large pan over medium high heat. Once oil is hot, add shrimp and cook for about 5 - 6 minutes, flipping halfway until shrimp is fully cooked
Prepare bowl - add rice, cucumber, carrot, ginger, edamame, red onion, shrimp, avocado, spicy mayo and sesame seeds to a bowl
