Ingredients
Stir Fry:
1/2 lb shrimp peeled, deveined & rinsed
3 tbsp olive oil
1 red bell pepper diced
1 carrot diced
1 white onion diced
2 green onion sliced
1 head of broccoli florets
1 packet udon stir fry cooked according to package
Salt to taste
Pepper to taste
Red pepper flakes to taste
1/4 cup cashews
Sauce:
2 tbsp peanut butter
2 tbsp tamari
1/2 lime juiced
1 tbsp honey
1 tsp chili crisp, for heat
Preparation
Rinse and cut vegetables accordingly. Set to the side. Prepare shrimp accordingly and season with salt & pepper. Set to the side
Set a large pan to medium high heat. Add 2 tbsp olive oil, salt and red pepper flakes. Once oil is hot, add onion and carrot, stirring frequently for about 3 minutes. After 3 minutes, add red bell pepper and broccoli, cooking for an additional 8 - 10 minutes until vegetables are fully cooked. Move to a clean plate and set to the side*
Prepare sauce - add peanut butter, tamari, lime juice, honey & honey crisp to a bowl. Mix well. Set to the side
After vegetables from step 3 are done cooking, add remaining 1 tbsp olive oil to the same pan and add shrimp, cooking for about 5 - 6 minutes, flipping halfway until fully cooked**
Prepare udon noodles accordingly. Once cooked, add udon to the pan with the shrimp, vegetables and sauce on medium heat. Mix until fully incorporated & top with cashews
*NOTE: Start step 3 while your vegetables cook in step 2
**NOTE: You can start step 5 (cooking udon) during step 4 while shrimp cook. Avoid having the noodles sitting out, you want them as fresh as possible for step 5!
