Ingredients
Sauce:
1 lime juiced
2 tbsp ginger minced
1 garlic clove minced
2 tbsp tamari
1 tbsp rice wine vinegar
1 tbsp maple syrup
2 tbsp almond butter
Chili crisp for heat
Seasonings:
1/2 tbsp oregano
Salt to taste
Pepper to taste
1 tsp garlic powder
1 tsp onion powder
1 tbsp paprika
1 tbsp olive oil
The rest:
1 lb shrimp peeled, deveined and rinsed
1 carrot ribboned
1 cucumber sliced
1/2 red cabbage sliced
2 scallions sliced
4 servings noodles of choice
Sesame seeds for garnish
Preparation
Rinse and cut vegetables accordingly. Set to the side. Prepare noodles according to packaging - set to the side.
Prepare sauce - add lime juice, ginger, garlic, tamari, rice vinegar, maple syrup, almond butter, and chili crisp to a bowl and whisk. Set to the side.
Prepare shrimp - peel, devein and rinse shrimp. Add shrimp, oregano, salt and pepper, garlic powder, onion powder, paprika, and olive oil to a bowl - incorporate well. Add shrimps to a pan on medium high heat cooking for about 5 - 6 minutes (flipping halfway) until shrimp is fully cooked. Set to the side.
Prepare bowl - add noodles, shrimp, 2 tablespoons sauce, carrot, cucumber and red cabbage to a bowl and mix well. Top with scallion and sesame seeds.
