Ingredients
Shrimp:
1 lb shrimp peeled, deveined and rinsed
1 tbsp olive oil
1 garlic clove minced
1/2 tsp chili powder
1/4 tsp onion powder
Salt to taste
Black pepper to taste
1 lime juiced
Tropical Pico:
1 diced avocado
1/3 minced red onion
1 mango diced
1 medium tomato diced
1 jalapeño diced and seeded
2 tbsp cilantro chopped
2 limes juiced
Salt to taste
Black pepper to taste
Dressing:
1/2 cup plain Greek Yogurt
2 tbsp sour cream
1 garlic clove
1/2 lime juiced
2 tbsp cilantro
Salt to taste
Black pepper to taste
Taco:
Tortillas of choice
Preparation
Prepare shrimp - add shrimp, olive oil, garlic, chili powder, paprika, onion powder, garlic powder, salt and lime juice to a bowl and mix well. Cover and marinate in fridge.
Prepare salsa - Rinse and cut vegetables accordingly, adding avocado, red onion, mango, tomato, jalapeño, cilantro, lime, salt and pepper to a bowl and mix well. Cover and place in fridge.
Add olive oil to pan on medium high heat. Once oil is hot, add shrimp and cook for about 7 - 8 minutes until fully cooked, flipping halfway. Set to the side
Prepare dressing - add Greek yogurt, sour cream, garlic, lime juice, cilantro, salt and pepper to a blender and blend until smooth.
Assemble tacos - place tortillas down and top with add pico de gallo, shrimp, dressing, cilantro and lime juice.
