SHRIMP SCAMPI & FETTUCCINE

Ingredients

1.5 lb shrimp deviend and peeled

1 box fettuccine pasta

2 tbsp salted butter

2 tbsp extra virgin olive oil

4 garlic cloves minced

1/2 cup dry white wine

Red pepper flakes to taste

3/4 tbsp kosher salt

Black pepper to taste

1/3 cup fresh parsley chopped

1/2 cup pasta water

1/2 lemon juiced

Lemon zest to taste

Preparation

  1. Cook 1 box fettuccine accordingly and set to the side *

  2. Set large pan to medium heat. Once pan is hot, add butter and olive oil until melted. Once melted, add garlic cooking until garlic begins to smell sweet, do not overcook and cook evenly (about 3 - 4 minutes)

  3. Add white wine, red pepper flakes, salt and black pepper. Reduce to low heat. Mix well and cook until white wine has reduced (about 4 - 5 minutes)

  4. Add shrimp and cook until fully cooked (about 3 - 4 minutes each side)

  5. Add parsley, lemon juice, cooked pasta and pasta water. Mix well and top with lemon zest and black pepper

*PRO TIP:

Don't leave cooked pasta out, it will dry. To preserve the pasta, save pasta water to dip into or coat in oil
