UDON IN BLACKBEAN SAUCE traditionally known as JJAJJANGMYEON

Ingredients

4 bunches of udon noodles

1 lb lean ground beef

1/2 white onion diced

1 zucchini diced

5 bunches green onions chopped

3 garlic cloves minced

Nonstick spray for the pan

1/3 cup black bean garlic sauce

About 2 cups water

Salt to taste

Pepper to taste

5-6 packs zero calorie sweetener of choice (I used Truvia)

2 tbsp cornstarch

Preparation

  1. Rinse and cut vegetables accordingly

  2. Boil water in a large pot and cook udon noodles according to packaging*

  3. Set a large pan to medium high heat and spray with nonstick spray to coat the bottom adding garlic and onion. Cook until onions start to become translucent (about 5 minutes). Once onions become translucent, add zucchini and cook for about 3 minutes

  4. Add ground beef and cook until beef is about 90% cooked, (about 4-5 minutes), followed by green onions. Mix ingredients well

  5. Once ingredients are well incorporated, add black bean sauce / black bean paste. Mix well. Once black bean sauce is well incorporated, add enough water to cover the ground beef. Add salt, pepper and sweetener**. Mix well

  6. Add cornstarch and mix well. Bring to a simmer and cover

  7. Add cooked noodles to a bowl and top with sauce mixture


*NOTE: The udon noodles will get hard and stick together, you want to cook them after the sauce is prepared

**NOTE: Make sure you do a taste test! When I tasted the sauce it needed a lot more sweetener than I anticipated!!
