TUSCAN CHICKEN PASTA

Ingredients
Chicken Marinade:
1.5 lb chicken breast cubed
2 tbsp olive oil
3 cloves of garlic minced
1 tbsp dried sweet basil
1 tsp Dijon mustard
Salt to taste
Pepper to taste
The rest:
8 oz penne ziti pasta
8 oz jar sundried tomatoes drained
3 cups Silk high protein cashew & almond milk, unsweetened
2 tbsp all purpose flour
3 cups baby spinach
1/2 cup parmesan cheese shredded
Preparation
Rinse and cut vegetables and chicken accordingly. Set to the side
Boil water and cook pasta according to packaging
Prepare chicken marinade - add chicken, olive oil, garlic, sweet basil, salt, pepper and Dijon mustard to a zip lock bag. Release all air and massage ingredients until well incorporated
Set a large pan to medium high heat. Once pan is hot, add chicken ensuring that chicken is in one even layer. Leave chicken to cook on that same side for about 3 minutes before flipping chicken to cook on the other side to cook for another 3 minutes
Add your sundried tomatoes, mix well and cook for another 3 minutes
While cooking, add milk and flour to a bowl. Whisk until flour is well incorporated with milk. Add milk mixture to chicken, reduce heat to low and stir until sauce thickens
Add spinach and mix well in sauce, followed by cooked pasta
Prepare pasta on plate and top with parmesan cheese
