CHIPOTLE CHICKEN BOWLS

Ingredients

Chipotle chicken marinade:

2 tbsp olive oil

1 garlic clove

1 lime juiced

1 tbsp honey

Salt to taste

Black pepper to taste


Chipotle Topping Sauce:

5.3 oz (about 3/4 cup) plain Greek yogurt

1 chipotle pepper + 1 tbsp adobo sauce

1 tsp honey

1/2 lime juiced

1 garlic clove

Salt to taste

Pepper to taste


Cilantro Rice:

1 cup uncooked white rice

1 tbsp olive oil

2 tbsp cilantro chopped

1 lime juiced

Salt to taste

Pepper to taste


The Rest:

1.3 lbs chicken breast sliced thin, into cutlets

1/2 white onion diced

1 Roma tomato diced

seasoned with drizzle olive oil, salt and pepper  (~60 calories)

Boston lettuce chopped

2 avocados sliced

15.5 oz can black beans

1/4 cup shredded cheese

Preparation

  1. Prepare chicken marinade - blend olive oil, garlic, lime juice, honey, salt and pepper in the emergent blender. Add chicken to a freezer bag followed by chicken marinade.  Release all air and seal shut.  Massage marinade in chicken well and move to the fridge for about 1 hour.

  2. Meanwhile .. cook rice according to packaging.  Once cooked, add olive oil, cilantro, lime juice, salt and pepper to rice and incorporate well.  Set to the side

  3. Prepare chipotle sauce - add Greek yogurt, chipotle pepper, honey, lime juice, garlic, salt and pepper to the emergent blender.  Move to air seal container

  4. Rinse and cut white onion, lettuce and tomato accordingly.  Set to the side (if you want to season tomatoes, do so accordingly & move to air seal container)

  5. Prepare black beans according to packaging and move to air seal container

  6. Once chicken is marinated, heat a cast iron skillet on medium high heat.  Once skillet is hot, add chicken and cook for about 5 - 6 minutes flipping halfway until chicken is fully cooked.  Set aside and slice

  7. Add white onion to the same skillet, reducing heat to medium.  Stir constantly to avoid burning.  Add 1 tbsp olive oil, salt and pepper, if needed.  Cook until translucent (about 4 minutes).  Combine chicken and white onion.

  8. Prepare bowl - add rice, chicken and onions, lettuce, tomato, black beans, avocado, cheese and chipotle sauce to a bowl, garnishing with cilantro and enjoy
