Ingredients
1.5 lbs chicken breast
1 white onion chopped
4 stalks of celery chopped
3 tbsp ginger minced
6 garlic cloves minced
3 tbsp olive oil
Kosher salt to taste
Bleck pepper to taste
Red pepper to taste
6 cups water
1 tbsp better than bouillon chicken base
2 bay leaves
1 lemon juiced
1 cup orzo
Preparation
Rinse and cut vegetables accordingly. Set to the side
Add olive oil with salt, black pepper and red pepper flakes to a large pot on medium high heat. Once oil is hot, add onion, celery, garlic and ginger to the pot. Stir frequently cooking until translucent (about 5 - 7 minutes)
Once translucent, add water, better than bouillon, salt, pepper, bay leaves and chicken breast to the pot. Bring to a boil. Once boiling, reduce to simmer and cover - simmering for about 15 - 20 minutes until chicken is fully cooked. Once chicken is fully cooked, remove chicken from soup and shred.* Discard bay leaves.
Add lemon juice and orzo and simmer covered for about 10 - 12 minutes, until orzo is fully cooked. Return chicken to the soup and incorporate ingredients well.
*NOTES: Begin step 4 before shredding so you can shred while the orzo cooks
