TURKEY MEATBALLS OVER ORZO & SPINACH

Ingredients
1 lb ground turkey
3 garlic cloves minced
1/2 cup plain panko breadcrumb
1 tsp lemon pepper seasoning
1 egg
2 tbsp olive oil
Salt to taste
Pepper to taste
Red pepper flakes to taste
2 tbsp grass fed butter
1 cup orzo
3 cups chicken stock
1 lemon juiced
1 container spinach
Preparation
Preheat oven to 400°. Line a baking tray with tin foil and 1 tbsp olive oil - make sure you rub in oil on foil so the meatballs don't stick ! Set to the side
Prepare meatballs - add ground turkey, 1/2 minced garlic, salt, pepper, lemon pepper, red pepper flakes, 1 tbsp olive oil and egg to a bowl. Using your hands, combine ingredients until fully incorporated. Begin to create even sized meatballs and distribute evenly across baking tray (I made 14 meatballs from this). Bake for about 20 - 25 minutes, until meatballs are fully cooked
While your meatballs are in the oven, set a large pan to medium high heat with butter. Once butter begins to bubble, add garlic stirring constantly until your butter begins to brown*. Add orzo to the browned butter, coating all the orzo. Add chicken stock and lemon juice bringing to a boil. Once boiling, reduce to simmer and cook for about 20 minutes uncovered until orzo is fully cooked. Season with salt & pepper to liking
About 2 minutes before your orzo is done cooking, add spinach and juice of 1 lemon. Mix well. Return your meatballs back to orzo and enjoy
*NOTE: DO NOT let your garlic burn, if you feel the flame is too high, reduce heat to medium
