SWEET & SOUR CHICKEN WITH RICE

Ingredients

Sweet & Sour Sauce:

1/3 cup preferred soy sauce

2 tbsp honey

1 tbsp white vinegar

1 tbsp tomato paste

2 tbsp cornstarch


Chicken, Vegetables and Rice:

2 tbsp peanut oil

2 tbsp garlic minced

2 tbsp ginger grated

1 1/4 lb chicken breast cubed

2 red bell peppers cubed

1 yellow onion cubed

1 pineapple cubed

1 cup rice of choice


Optional Garnish:

Green onion

Sprinkle of sesame seeds

Preparation

  1. Rinse and cook rice according to packaging. Set to the side

  2. Add all Sweet & Sour sauce ingredients to a small bowl. Whisk well. Set to the side

  3. Cut bell peppers and yellow onion accordingly and add to a bowl

  4. Cut pineapple in half. Once cut in half, cut around the perimeter of the halved pineapple and start to draw out the bowl. Cut lines horizontally and vertically to create cubes. Dig out cubed pineapple with a spoon and add to separate bowl

  5. Add peanut oil, bell peppers and yellow onion to a skillet. Cook until onions begin to look translucent (about 10 minutes). Place to the side

  6. Add a little peanut oil, garlic and ginger to hot skillet and cook for 2 minutes. Add chicken and cook for about until fully cooked (15 minutes)

  7. Once chicken is fully cooked, reduce heat and add sweet & sour sauce to skillet. Stir until sauce thickens. Add sesame seeds and stir

  8. Add 3/4 cup of cooked rice, sweet & sour chicken and vegetables to pineapple boat. Top with sesame seeds and green onion
