SWEET CHILI AIR FRYER CHICKEN SANDWICHES

Ingredients

4 brioche buns

1.4 lbs chicken breast halved and pounded

1/3 cup all purpose flour

1 tsp chili powder

1 tsp garlic powder

2 eggs beaten

1 bag sweet chili protein chips crushed

1/2 cup panko bread crumbs

1/4 cup sweet chili sauce

1 medium tomato sliced

Iceberg lettuce

Preparation

  1. Rinse and cut vegetables accordingly, set to the side

  2. Cut chicken breasts in half. Lie a Ziplock bag down on its side* and add chicken to the bag (distributing evenly and next to one another), releasing all air and sealing shut. Using a rolling pin, pound chicken breast until flat. Remove chicken from bag and add directly to the cutting board

  3. Preheat air fryer to 400° and line your air fryer basket with tin foil. Heat up your basket while preheating

  4. Assemble dipping stations: Bowl 1 - flour, chili powder and garlic powder (mix well). Bowl 2 - eggs beaten. Bowl 3 - protein chips and panko breadcrumbs (mix well)

  5. Dip chicken in flour mixture, then egg mixture and lastly breadcrumb mixture

  6. Using an oven mitt, remove hot basket from air fryer and spray foil with avocado oil. Add coated chicken to basket and air fry for 20 minutes, flipping halfway until fully cooked

  7. Assemble sandwich - Add chicken, 1 tbsp of sweet chili sauce, tomato and lettuce to brioche bun


*NOTE: I placed the Ziplock bag on top of a cutting board to avoid damage to the granite countertop. Please pound with caution
