Ingredients
4 Whole Wheat wraps
2 cups cheese blend on choice
1.15 lb skirt steak sliced into thin strips
2 green bell peppers julienne cut
1/2 white onion julienne cut
1 tbsp olive oil
Salt to taste
Pepper to taste
Preparation
Place skirt steak in the freezer for 30 minutes to make the slicing process easier. In the meantime, cut peppers and onions according to instruction - place to the side. Once steak is chilled, rub each side with salt and pepper. Slice steak accordingly. Add olive oil and steak to a large pan over medium heat and cook through (about 5 minutes each side). Once steak is cooked, remove from heat and place to the side. DO NOT REMOVE any juices from the pan
Add cut peppers and onions to the same pan over medium heat. Cook and cover until onions are translucent (about 10 - 12 minutes). Place cooked vegetables to the side
Take one wrap adding 1/4 cup cheese blend. Place wrap with cheese in air fryer until melted. Remove from oven and add steak, peppers and onion to wrap. Top peppers and onion with 1/4 cup cheese blend (total 1/2 cup cheese per quesadilla). Fold wrap over creating quesadilla
Preheat air fryer at 375°. Once at desired temperature, air fry for about 8 min, or until tortilla begins to brown and crisp. Remove from air fryer and cut into desired slices
