Ingredients
Steak:
1 lb flank steak
1 tbsp olive oil
1 tsp salt
1 tsp pepper
1 tsp cumin
1 tsp chili powder
Fajita:
2 garlic cloves minced
2/3 yellow onion chopped
1 bell pepper chopped
4 large tortillas of choice
2 cups Mexican cheese
Preparation
Preheat oven at 350°.
Dice yellow onion and bell pepper and minced garlic. Place to the side.
Season steak with olive oil salt pepper, cumin and chili powder.
Set pan to high heat - cook flank steak to preference (while steak is cooking, cut open for reference) . Once cooked, remove steak from pan and rest. Cube cut when cool.
Lower heat of the pan - add oil, minced garlic and onion to the pan. When onions are translucent, add bell peppers until soft.
Lay out tortillas and add cheese, steak, onions and peppers.
Fold top of tortilla towards the center and repeat folds as you turn into a crunch wrap fold. Place folded side face down onto a baking sheet.
Sprinkle Mexican cheese on top of each wrap and bake for 25 minutes.
