Ingredients
Chicken: 1.15 lb chicken breast
2 cups water
1 (6 oz) can tomato paste
3 chipotle peppers in adobo sauce
2 tbsp chicken broth
Salt to taste
Sauce:
1 cup 2% plain Greek Yogrut
1/4 cup mayonnaise
1 chipotle pepper in adobo sauce
1 garlic clove peeled
1 tsp lime juice
1 tsp olive oil
1 tsp honey
Sea salt to taste
Pepper to taste
The Wrap:
4 wraps of choice
Guacamole
Romaine lettuce chopped
Preparation
Set oven to 350°. Add water, tomato paste and chicken broth to a bowl and mix well. Set to the side
Place chicken breast in a baking dish and top chipotle peppers. Proceed to pour mixture from step one over chicken and chipotle peppers. Cover baking dish with foil bake for 1 hour and 15 minutes until chicken is fully cooked
While chicken is baking prepare sauce - add Greek yogurt, mayonnaise, chipotle, garlic, lime juice, olive oil, honey, salt and pepper to a blender. Blend until fully mixed and smooth
Prepare wrap - add chipotle shredded chicken, chopped romaine lettuce, guacamole and homemade chipotle sauce to wrap, roll and cut in half
