MAPLE MUSTARD CHICKEN THIGHS

Ingredients

1.25 lbs chicken thighs boneless and skinless

1/3 cup Dijon mustard

1/2 tbsp ground mustard

2 tbsp maple syrup

1 garlic clove minced

1 tbsp rice vinegar

1 tbsp dried oregano

2 tbsp brown sugar

1 tsp kosher salt

1 tsp black pepper

2 tbsp olive oil

Preparation

  1. Prepare marinade - add Dijon mustard, ground mustard, maple syrup, garlic, rice vinegar, oregano, brown sugar, salt and pepper to a mixing bowl. Mix well until fully incorporated. Separate out 1/3 of marinade and keep in separate container

  2. Add chicken and marinade to a Ziploc bag. Release all air & seal and massage ingredients well into chicken. Marinate overnight (or at least 1 hour)

  3. Once marinated, set a cast iron skillet with grill lines to medium height heat and add olive oil. Once olive oil is hot, add chicken thighs and cook for about 15 minutes (flipping halfway) until chicken is fully cooked. At the 10 minute mark, pour remaining marinade (the one that was separated) over chicken until glazed. Remove from heat and serve over white rice & vegetables
