LEMON CHICKEN & ASARAGUS STIR FRY WITH RICE

Ingredients

1 cup uncooked rice of choice

1 1/2 cup chicken broth

1.25 lb chicken sliced into tenders

1 lb asparagus cut into threes

1 tbsp olive oil

1 tbsp garlic minced

1 lemon juiced

1/2 lemon zested

3 tbsp soy sauce

Salt to taste

Pepper to taste

Preparation

  1. Rinse and cook rice of choice according to packaging with chicken broth. Place to the side once cooked

  2. Rinse asparagus and lemon. Once vegetables are cleaned, cut accordingly. Place to the side. Cut chicken accordingly and place to the side

  3. Put a large pan to medium heat. Once pan is hot, add olive oil and cover base of the pan. Place chicken tenders on pan topping with salt and pepper. Cook chicken through - about 5 - 6 minutes before flipping, cook other side for another 3 - 4 minutes. Add garlic to pan with chicken, mix and cook for an additional 2 minutes (make sure NOT to burn garlic)

  4. Add asparagus to chicken and garlic mixing well. Cook asparagus for about 2 minutes before adding lemon zest and lemon juice. Mix well and cook for about 2 minutes before adding soy sauce. Mix well and cook for about 3 minutes to ensure chicken is coated well with soy sauce (flip halfway). Once chicken is fully coated with sauce, place chicken on top of asparagus and cook asparagus for an additional 2 - 3 minutes in sauce
