Ingredients
Sauce:
1/2 cup honey
1/3 cup sriracha
2 cloves of garlic grated
1/2 tsp red pepper flakes
1/2 lime juiced
The Rest:
1 cup uncooked rice of choice
1.3 lb chicken breast thinly sliced
Salt to taste
Pepper to taste
2 tbsp avocado oil
1 zucchini sliced
1 yellow squash sliced
1 carrot shredded
1/4 cup low fat ranch
Preparation
Preheat oven to 400°
Rinse and cut your vegetables accordingly. Set to the side. Rinse and cook your rice according to packaging. Set to the side
Prepare your sauce - add honey, sriracha, garlic, red pepper flakes and lime juice to the bowl. Whisk well and set 2 tbsp of sauce to the side
Season both sides of chicken with salt and pepper. Add avocado oil to a medium sized oven safe pan, set to medium high heat. Once oil is hot, add chicken and cook for 4 minutes before flipping. Cook chicken for an additional 2 minutes. Move to a clean plate and set to the side
Add zucchini and squash to the pan and cook for about 2 minutes. Remove pan from heat and add chicken on top of zucchini and squash. Coat each chicken with sauce and bake for about 15 minutes until chicken is fully cooked
Prepare your bowl - add rice, zucchini, squash, carrots, chicken, drizzle of hot honey sauce (from 2 tbsp set to the side) and 1 tbsp of low fat ranch
