HONEY GARLIC CHICKEN & ROASTED BROCCOLI WITH RICE

Ingredients

Chicken: 1.3 lb chicken breast cubed

Salt to taste

Pepper to taste

Garlic powder to taste

About 1/4 cup all-purpose flour

3 tbsp olive oil

3 garlic cloves minced


Sauce:

1/4 cup honey

1/2 cup soy sauce

2 tbsp olive oil


The Rest:

1 cup uncooked rice of choice

1 head broccoli

2 tbsp olive oil

Kosher salt to taste

Pepper to taste

Green onion for garnish

Sesame seeds for garnish

Preparation

  1. Rinse and cook rice according to packaging. Set to the side.

  2. Preheat oven to 400°. Rinse and cut broccoli head into florettes. Line a baking sheet with tin foil and lay florettes out evenly. Drizzle with olive oil, kosher salt and pepper. Bake for 25 minutes.

  3. Prepare the sauce - add honey, soy sauce and olive oil to a bowl and mix well. Set to the side.

  4. Cut chicken accordingly. Season generously with salt, pepper and garlic powder and add to a freezer bag. Seal the bag shut and massage ingredients into chicken. Reopen the bag and add flour. Seal the bag again and massage flour into chicken until evenly coated.

  5. Heat olive oil in a pan on medium high heat. Once oil is hot, add chicken and cook for 8-10 minutes until fully cooked, flipping halfway. Once chicken is fully cooked, add sauce to the pan with cooked chicken. Combine sauce and chicken until mixture begins to boil. Reduce heat until sauce begins to thicken. Set to the side.

  6. Top chicken with green onion and sesame seeds and serve over roasted broccoli and rice.
