Ingredients
1.15 lb chicken breast cubed
3 tbsp olive oil
2/3 yellow onion diced
1 green bell pepper diced
1 1/3 garlic clove minced
1 2/3 cup chicken broth
1 lime squeezed
1 medium tomato diced
9 oz black beans rinsed
1 cup jasmine rice uncooked and rinsed
Salt to taste
Pepper to taste
Chopped cilantro to taste
Preparation
Rinse and cut vegetables and chicken accordingly
Add 2 tbsp olive oil to a medium sized pot over medium heat. Once olive oil is hot, add cubed chicken along with salt and pepper until chicken is cooked through (about 7 - 8 minutes). Once chicken is cooked, place to the side
Once chicken is removed, add 1 tbsp olive oil to the pot followed by peppers and onion. Cook until onions are translucent (about 5 - 7 minutes). Add minced garlic for one additional minute and mix well
Once peppers, onion and garlic are mixed well, add chicken broth, lime juice, tomato, black beans, rice, salt and pepper to the pot mixing all ingredients well. Reduce heat to medium high simmer and cover cooking for 15 - 20 minutes until rice is fully cooked
Once rice is cooked, add cooked chicken and cilantro to the pot and mix well
