Ingredients
Chicken Marinade:
4 (1.5 lbs) chicken thighs boneless, skinless
2 oranges juiced
2 limes juiced
3 garlic cloves peeled
1 jalapeño seeded / scooped
2 tbsp fresh cilantro
1/4 cup soy sauce
2 tbsp honey
3 chipotle peppers in adobo sauce
Salt to taste
Pepper to taste
1 tbsp onion powder
Tacos:
12 taco tortillas of choice
1 cup shredded cheese
1/2 cup light sour cream
2 avocados
Iceberg lettuce
Hot sauce to taste
Cilantro for garnish
Lime wedge for garnish
Preparation
Prepare chicken marinade - add orange juice, lime juice, garlic, jalapeño , cilantro, soy sauce, honey, chipotle peppers, salt, pepper and onion powder to a blender. Blend until smooth. Add chicken thighs and chipotle lime marinade to a freezer bag. Release all air and massage marinade into chicken for about 1 minute. Refrigerate and marinate for at least 1 hour
Once marinated, preheat air fryer to 400°. Line baking basket with tin foil and evenly arrange chicken thighs across basket smooth side up. Pour some of the remaining marinade over chicken
Air fry chicken for about 20 minutes until chicken is fully cooked. Then, broil for 2 - 3 minutes
Distribute 1/4 cup shredded cheese across 3 taco tortillas and melt in toaster oven or microwave.
Once melted, prepare tacos (this is according to one serving)- add chicken thighs sliced, shredded lettuce, 1/2 avocado, 2 tbsp sour cream, hot sauce, cilantro and fresh lime juice evenly to 3 taco tortilla
