Ingredients

1 1/2 lbs chicken breast cubed

1/4 cup less sodium soy sauce

3 tbsp fresh peanut butter

1 tbsp rice vinegar

1 tbsp honey

Sriracha to liking

Red pepper flakes to liking

1 clove of garlic grated

1 tbsp ginger grated

1/2 lime juiced

1 tbsp olive oil

Green onion sliced for garnish

Sesame seeds for garnish

Preparation

  1. Cut chicken breast into cubes evenly. Set to the side

  2. Prepare chicken marinade - add soy sauce, peanut butter, rice vinegar, honey sriracha, red pepper flakes, garlic grated, ginger grated, lime juice and olive oil to a bowl and whisk well Add chicken breast to the marinade. Cover and refrigerate chicken for at least 1 hour or overnight (preferably)

  3. After marinating, evenly distribute chicken breast among skewers (about 5 cubes per skewer)*. Set large pan to medium high heat. Once pan is hot, add skewers and cooked undisturbed for about 5 minutes. Flip and cover, cooking for an additional 3 - 4 minutes until chicken is fully cooked. Remove from heat and set to the side

  4. Add remaining marinade to the pan and cook until thick. Turn off heat and add chicken skewers back to the pan to coat on sauce

  5. Top with green onion and sesame seeds


*NOTE - Follow skewers instructions accordingly, you may have to soak them
