Ingredients

1.3 lb chicken breast

About 2 cups of water

1/2 cup mayonnaise

1 celery stalk diced

3 tbsp chives diced

2 tsp spicy brown mustard

Salt to taste

Pepper to taste

4 wraps of choice

Preparation

  1. Prepare shredded chicken - add chicken breast to a medium sized pot. Generously season chicken on both sides with salt and pepper. Once chicken is seasoned, add just enough water to cover chicken (about 2 cups depending on the size of your pot). Bring water to a boil, then cover and simmer for 15 - 20 minutes until chicken is fully cooked. Remove from heat and shred with two forks until chicken is shredded to liking. Set to the side and let chicken cool

  2. Rinse and cut celery and chives accordingly. Set to the side

  3. Once chicken is cooled, add mayo, celery, chives, mustard, salt and pepper to a large bowl. Mix ingredients well

  4. Prepare wraps - add chicken salad to wrap of choice
