Ingredients
1.25 lb chicken breast sliced thin
About 1/4 cup all purpose flour
Salt to taste
Pepper to taste
3 tbsp salted butter
3/4 cup chicken broth
2 lemons juiced
3 tbsp capers
1 tbsp lemon zest
Preparation
Season chicken breast with salt and pepper on both sides. Add flour to a bowl/dish and coat both sides of chicken with flour evenly. Set to the side
Set large pan to high heat (high heat = more crispy). Once pan is hot, add butter until melted. Once butter is melted and begins to brown, add chicken and cook for 4 - 5 minutes until chicken is brown and crispy. Flip and repeat cooking for about 3 - 4 minutes. Remove from heat and set to the side
Reduce heat to medium high, adding chicken broth, lemon juice and capers. Stir and bring to a boil until ingredients begin to reduce
Once reduction occurs, reduce heat to a high simmer adding chicken back to the pan and spoon mixture over chicken. Cover and simmer for 10 minutes, flipping halfway topping with lemon zest
