Ingredients

1.25 lb diced chicken breast

2 cups riced (minced) cauliflower

1/2 cup frozen carrots & peas

1 tsp minced garlic

1 cup uncooked rice

2 eggs

1 tsp sesame oil

3 tbsp soy sauce

Salt to taste

Pepper to taste

Preparation

  1. Cook 1 cup of dry rice according to packaging - put aside when finished

  2. Add sesame oil and frozen carrots & peas to wok or pan - sauté until soft (about 5 min). Add garlic halfway

  3. Add diced chicken and cook all the way through

  4. Once chicken is cooked all the way through, add riced cauliflower and cook until cauliflower is warmed (5-7 min)

  5. Push mixture to the side and create a well in the center where you add two eggs (beaten). Once eggs are cooked, mix thoroughly with other ingredients

  6. Add cooked rice to mixture in wok or pan

  7. Add soy sauce, salt and pepper for taste.
