Ingredients
Sauce:
1 lemon juiced
1 cup chicken broth
1/3 cup white wine
1 tbsp all purpose flour
2 tbsp butter
The Rest:
1.3 lb chicken breast thinly sliced
1/3 cup all purpose flour
2 eggs beat
3 tbsp olive oil
Salt to taste
Pepper to taste
1 lemon sliced
Preparation
Add flour, salt and pepper to bowl 1, mix well. Add eggs to bowl 2, beaten.
Dip chicken in flour mixture and shake off excess. Next, dip chicken in egg mixture fully coating on both sides and move to a plate
Add olive oil to a medium sized pan set to medium high heat. Once oil is hot, add chicken and cook for about 10 - 12 minutes, flipping halfway* until chicken is fully cooked
Once fully cooked, move chicken to a clean plate and set to the side
Add lemon slices to pan cooking each side for 1 minute until charred. Add butter until melted. Once melted, add flour and whisk until well incorporated
Reduce heat to low and add sauce ingredients to pan - add lemon juice, chicken broth, and white wine until mixture is reduced**
Return chicken to pan and coat both sides generously with sauce, place lemon sliced on chicken and cook for another 2 - 3 minutes
*NOTE: make sure your chicken is browned before flipping
**NOTE: If your sauce need to be thicker, add flour accordingly
