CHICKEN CAESAR SALAD WRAPS & HOMEMADE CAESAR DRESSING

Ingredients

Chicken Marinade:

1.15 lb chicken breast sliced thin

1/2 lemon juiced / squeezed

1 tbsp olive oil

2 tbsp spicy brown mustard

1 tbsp rosemary

Salt to taste

Black pepper to taste


Dressing:

1 garlic clove peeled

1/2 lemon juiced / squeezed

1 tbsp olive oil

2 tsp Worcestershire sauce

1/2 cup 5% fat plain Greek Yogurt

1 tbsp spicy brown mustard

1 tsp garlic powder

1/4 cup parmesan cheese grated

Salt to taste

Black pepper to taste


The Wrap:

1 tbsp olive oil (for cooking chicken)

4 wraps of choice

1/2 bundle of romaine lettuce chopped

1 large seedless cucumber peeled and diced

Preparation

  1. Marinate chicken - add chicken breast, lemon juice, olive oil, spicy brown mustard, rosemary, salt and pepper to a zip lock bag. Zip the bag closed releasing all air and massage marinade into chicken until evenly distributed. Place in the fridge for minimum 1 hour

  2. Once marinated, cook chicken - set pan to medium high heat adding 1 tbsp olive oil. Once oil is hot, add chicken and cook for about 10 - 12 minutes (flipping halfway) until chicken is fully cooked. Set to the side and cut into strips

  3. Rinse a cut vegetables accordingly. Place to the side

  4. Prepare dressing - add garlic, lemon juice, olive oil, anchovies, Worcestershire sauce, Greek yogurt, spicy brown mustard, parmesan cheese, water, salt and pepper to a blender. Blend until ingredients are incorporated well

  5. Add chopped romaine lettuce and diced cucumbers to a bowl adding 1 - tbsp of the salad dressing and toss until vegetables are evenly coated

  6. Assemble wrap - add dressed romaine lettuce and cucumbers and chicken to your wrap, roll and cut
