Ingredients
Sauce:
1/3 cup soy sauce
1 tbsp hoisin sauce
1 tbsp rice vinegar
2 tbsp honey
2 cloves of garlic grated
1 tbsp ginger grated
The Rest:
3 tbsp olive oil
Red pepper flakes to taste
1.3 lb chicken breast cubed
Salt to taste
Pepper to taste
About 1/4 cup cornstarch
1 red bell pepper cubed
1 head of broccoli florets
1/3 cup cashews
Preparation
Prepare sauce - add soy sauce, hoisin sauce, rice vinegar, honey, grated garlic and grated ginger to a small bowl and whisk well. Set to the side
Cut chicken accordingly. Add chicken, salt, pepper and cornstarch to a freezer bag. Seal and incorporate into chicken until fully coated. Set to the side
Set a large pan to medium high heat. Heat 2 tbsp olive oil and red pepper flakes (to liking). Once oil is hot, add chicken, distributed evenly across pan. Leave chicken undisturbed for about 5 minutes before flipping over. Cook other side for an additional 3 minutes. Move to a clean plate and set to the side
Return pan to head adding remaining 1 tbsp olive oil, bell peppers and broccoli cooking for about 2 minutes before returning chicken to pan. Reduce heat to low and add sauce and cashews to pan. Stir well. Cover for about 5 minutes
