BUFFLAO CHICKEN SALAD WRAPS

Ingredients

1.5 lb chicken breast

1/2 small red onion minced

1 celery stalk minced

1/3 carrot minced

1/2 cup mayonnaise

1/4 cup buffalo sauce, or to liking

2 cups Romaine lettuce shredded

2 tbsp ranch dressing of choice (see my Greek Yogurt based ranch dressing)

4 wraps of choice

Preparation

  1. Prepare shredded chicken - add chicken breast to a medium sized pot. Generously season chicken on both sides with salt and pepper. Once chicken is seasoned, add just enough water to to cover chicken (about 2 cups depending on the size of your pot). Bring water to a boil, then cover and simmer for 15 - 20 minutes until chicken is fully cooked. Remove from heat, move to cutting board and shred with two forks until chicken is shredded to liking. Set to the side and let chicken cool

  2. Rinse and cut vegetables accordingly, set to the side

  3. Once chicken is cool, add shredded chicken, red onion, celery, carrot, mayo, buffalo sauce, salt and pepper to a bowl and mix well

  4. Prepare wraps - add buffalo chicken salad, romaine lettuce and ranch dressing to a wrap
