BBQ BABY BACK RIBS

Ingredients

2.5 lbs baby back ribs (membrane removed)

Salt to taste

Pepper to taste

BBQ rub to taste


BBQ Sauce:

1 tbsp olive oil

1 white onion finely diced

2 garlic cloves minced finely

1 tsp fresh thyme chopped

1/2 cup ketchup

1 tbsp sriracha

2 tbsp brown sugar

1 tbsp apple cider vinegar

1 tsp Worcestershire sauce

Salt to taste

Pepper to taste

Preparation

  1. Preheat oven to 275°. Meanwhile, ensure the membrane is removed from the rack

  2. Once membrane is removed, season both sides of the ribs generously with kosher salt, pepper and BBQ dry rub of choice. Rub in well. Once seasoning is rubbed in, transfer rack to a tin foil packet and close all side of the foil.

  3. Move to a baking sheet and bake about 3 hours and 15 minutes until ribs are fully cooked (place ribs on the middle rack)

  4. While ribs are baking, prepare BBQ sauce - add olive oil and white onion to a sauce pan on medium high heat. Cook onions until translucent and cooked down (about 8 - 10 minutes). Once onions are translucent, add thyme and garlic cooking until garlic is translucent (about 3 minutes). Stir well and constantly to avoid burning

  5. Add ketchup, sriracha, brown sugar, apple cider vinegar, Worcestershire sauce, salt and pepper until sauce begins to bubble and thicken. Stir well and set to the side

  6. Once ribs are fully cooked through, set the oven to broil, brush on BBQ sauce (meat side up) and broil until sauce caramelizes
