Ingredients
Slaw:
2 cups green and red cabbage shredded
1 carrot julienne cut
1 tsp sesame oil
2 tbsp rice vinegar
1 tsp zero calorie sweetener
Sauce:
3 tbsp soy sauce
1 tbsp cooking wine
1 tbsp rice vinegar
1 tsp sesame oil
1 tbsp zero calorie sweeter
1 tbsp cornstarch
The Rest:
8 whole wheat taco soft shells
1 lb lean ground beef
3 scallions chopped (separate 1 scallion for garnish)
2 tbsp fresh ginger minced
3 cloves of garlic minced
1 tbsp olive oil
2 radishes halved and sliced for garnish
Sesame seeds for garnish
1 avocado for garnish
Mayo:
1/2 cup mayo (mayo made with olive oil is less calories!!)
2 tbsp sriracha, or to liking
1/2 tsp sesame oil
1/2 tbsp soy sauce
Preparation
Rinse and cut vegetables accordingly. Set to the side. Prepare slaw - add green and red cabbage, carrot, rice vinegar and sweetener to a bowl. Toss & mix ingredients well. Set to the side to set
Prepare mayo - add mayo, sriracha, sesame oil and soy sauce to a bowl and mix until fully incorporated. Set to the side
Prepare sauce - add soy sauce, cooking wine, rice vinegar, sesame oil, sweetener and cornstarch to a bowl and mix well. Set to the side
Add olive oil to a large pan on medium high heat. Once oil is hot, add scallion, ginger and garlic, stirring constantly until translucent (about 3 minutes). Once translucent, add ground beef, breaking up into small pieces
When ground beef is cooked about 90%, add sauce and mix well until ground beef is fully cooked. Set to the side
Prepare tacos - add ground beef, slaw, radishes, avocado, sesame seeds, scallions and mayo over tortillas
