PB&J OVERNIGHT OATS

All the flavors of a classic PB&J, layered into a creamy, protein-packed breakfast that tastes like comfort in every bite.

Strawberry Jelly:

2/3 container of strawberries quartered

1 packet zero calorie sweetener


Oats Base:

1 banana

1 cup Greek Yogurt

1 tbsp maple syrup

1 tsp vanilla extract

1 cup rolled oats

1/3 cup milk of choice


Peanut Butter Layer:

2 tbsp powdered peanut butter

1 tbsp peanut butter

Drizzle of honey


Optional Toppings:

Peanut butter

Honey

  1. Prepare the jelly - Add strawberries and sweetener to a pan over high heat. Cook, stirring and mashing occasionally, until the mixture thickens and reduces, about 10 to 12 minutes. Remove from heat and allow to cool completely.

  2. Make the yogurt base - In a medium bowl, mash the banana until smooth. Add Greek yogurt, maple syrup, and vanilla extract. Mix until fully combined. Transfer 1/3 of the mixture to a separate bowl and set aside.

  3. Prepare the oats - Add rolled oats and milk to the remaining yogurt mixture (the 2/3 mixture). Stir until evenly combined, then divide evenly between two containers

  4. Make the peanut butter layer - Add powdered peanut butter to the reserved yogurt mixture (the 1/3 mixture) and mix until smooth. Spoon evenly over the oat mixture.

  5. Assemble - Top each portion / container with the cooled strawberry jelly. OPTIONAL - Add a drizzle of peanut butter and honey

  6. Chill - Cover and refrigerate overnight, or for at least 6 hours before serving.
